Spinach-Berry Spinach Salad with Fresh Berry Dressing

It’s summer and the fresh fruit and vegetables are now ripe, ready and begging to be devoured! This is one of my very favorite summer salads, therefore one I had to share. Not only is it easy, the ingredients are easy to come by this time of year (salad: farmers market, dressing: pantry) and it's gluten free! Plus it takes no time at all – just toss, serve and done. No measuring (unless you want to), no preparation time – perfect for that summer potluck or just for a fresh delicious side dish. It’s beautiful on the table, and those bright berries just begging to be eaten, and they pair so well with the spinach that it makes a great way to get your kids (and your family) to love their greens too!*


Salad (all approximate of course)

  • 6 Cups fresh baby spinach greens, washed

  • 2 Cups fresh berries, washed & chopped if necessary

  • I like raspberries & blackberries, strawberries are superb too… be adventurous!

  • 6 Sprigs fresh Mint leaves, washed and chopped coarsely

  • 2 Tbsp Poppy-Seeds


  • 1 Cup fresh berries, washed

  • 1 Tbsp Vinegar

  • White or Red wine for a subtler taste, Balsamic for more kick – you pick!

  • 2 tbsp Extra Virgin Olive Oil

  • 1 Tbsp Liquid Honey (raw, unpasteurized if you can)

Directions (could it be easier?)

  • Blend all Dressing ingredient together until pureed & smooth.

  • Toss Salad ingredients (except Poppy Seeds) together in a large bowl.

  • Drizzle Dressing over Salad and toss lightly together.

  • Sprinkle Poppy Seeds and Mint leaves overtop, serve and enjoy!!

You don’t even need to taste it to know it’s delicious! This recipe will serve about 4 and is super easy to double (or more). Make it often, and vary the berries & vinegars you use depending on what’s fresh as well as what you’re serving it with.
